[Recipe] Tokyo Banana by Alaimie Pangan of Matador (Manila)

Alaimie Pangan of Matador in Manila created this sparkling cocktail inspired by the fun Japanese snack, "Tokyo Banana." The drink features Japanese ingredients like sake and sweet potato shochu, with the addition of banana, peach, citrus, and a touch of honey to bring out the fruit-forward flavor.


The drink is bright and refreshing, thanks to the carbonation of the ingredients and the addition of tonic water. Tokyo Banana is something familiar, fun, and still has a charm of that untouched territory with sake being the base.


Ingredients:

45ml Sake

125ml Tokyo Banana Base (30ml Banana puree & 10ml Peach puree) 

5ml Honey

75ml Tonic


*Make the Banana puree

Weigh and mix 200gm banana, 20ml lemon juice, 40ml simple syrup & 30ml vodka, then hand blend until smooth. Store & chill.


*Make the Peach puree 

Weigh and mix 200gm peach, 15ml lemon juice, 30ml peach syrup & 30ml vodka, then hand blend until smooth. Store & chill.


*Make the Tokyo Banana Base 

Mix 90ml banana puree & 30ml peach puree with 20ml honey and 200ml tonic. Let it rest for 2hrs. Then add agar-agar, mix, and filter. Transfer to CO₂ charge bottle, to charge before using.


Method:

Combine the sake and charged Tokyo Banana Base in a rocks glass with a large cube ice.
