Shen, founder of the iconic Backdoor Bodega in Penang, shares the cocktail that’s become synonymous with the bar: the Georgetown Gimlet.

Inspired by the flavors of Penang, it brings together laksa, torch ginger flower, and bright citrus - ingredients that speak to the island’s rich culinary heritage. Yet despite its bold inspiration, the result is light, refreshing, and perfectly suited to Penang’s year-round sunshine. A true taste of Georgetown in a glass.

Ingredients:

20ml laksa cordial (simmered laksa broth with added sugar syrup)

50ml gin infused with torch ginger flower (bunga kantan)

15ml lime blend (mix of calamansi, lime, and Kaffir lime leaves)

Method:

Mix all ingredients in a shaker with ice, shake well, and strain into a coupe glass. Garnish with a torch ginger flower.
