[Recipe] Ngopi Demitria Ramona of Hats Bar (Jakarta)

Created by Demitria Ramona of Hats Bar (Jakarta), Ngopi demonstrates her playful take on dessert-style cocktails. It plays with your senses when cold gelato meets a pour of hot, spiced alcoholic sauce.


Ingredients:

15ml Christmas Spice Syrup* (Instructions below)

45ml Irish Whisky

30ml Espresso

1g Vanilla Pod Paste

60ml Hot water


1 scoop Vanilla Gelato

Garnish: Cherry (Amarena or Maraschino)


*How to make the Christmas Spice Syrup:

30g Cinnamon

2g Nutmeg

5g Cloves

10g Ginger

200g Brown Sugar

400g Water

Put all of the ingredients besides sugar in a pot and let it boil in high heat. Once its boiling, lower the heat to medium, let it simmer for 15 minutes. Turn off the heat and let it cool down to room temperature. Strain into a glass bottle with cover and keep refrigerated.


*How to make the hot alcoholic sauce

Add the Irish Whisky, vanilla pod paste together with the Christmas Spiced Syrup into hot water and stir till mixed.


Building the cocktail:

Scoop Vanilla Gelato into a martini or coupe glass and flatten it so it fills half the glass. Pour the hot alcoholic sauce over the gelato and top with cherry garnish. Enjoy the hot alcoholic sauce with the ice cold gelato.
