[Recipe] One Tea by Chester Smith from Xu Cantonese Restaurant and Bar (Dubai)

In Myanmar before smartphones and the internet, small street tea shops were more than just places to drink tea; they were where people gathered with friends, where neighborhoods connected. It wouldn’t be wrong to call them a second home.


As a whisky lover, Chester Smith of Xu Cantonese Restaurant & Bar in Dubai reconnects with his childhood and cultural roots with One Tea. This cocktail brings together whisky with Burmese black tea, combined with honey to enhance the richness, and finished with citrus and carbonation in a refreshing highball style drink.


Ingredients:

45ml Bourbon Whiskey

5ml White Cacao

3 Drops Amaro

Burmese Black Tea Soda (Carbonated or 60ml black tea topped with soda)

Garnish with white chocolate paint with black tea


Make the Burmese Black Tea:

13g Myanmar Black Tea 

2l Water 

1,000g Honey 

Citric Acid (1% of total liquid)

Boil the water and add black tea. Simmer for 10 minutes. Add honey and allow it to dissolve. Cool the mixture and store in the refrigerator for 24 hours. Strain carefully and add citric acid at 1% of the liquid amount.


Method:

Build all ingredients in a highball glass. Fill with ice and top with Burmese black tea soda. Serve cold and refreshing in highball style.
